1. Pudina Aam Panna: Aam Panna is one of the most effective traditional drinks known to help protect the body from heatstroke during intense summer days. Ingredients:
- Raw Mangoes – 2 kg
- Water – ½ glass to cook
- Sugar – ½ kg (for making powdered sugar)
- Pudina/ Mint leaves – a handful
- Black Pepper Powder – ½ teaspoon
- Roasted Cumin Powder – ½ teaspoon
- Rock salt – as per taste
Recipe:
- Wash the mangoes thoroughly and peel all the mangoes with the help of a peeler.
- Roughly chop all the peeled mangoes, remove the seeds and keep aside the seeds.
- In a pressure cooker add all the chopped mangoes and half glass of water to let it cook and soften the pulp and let it cook for 3 whistles.
- In a saucepan, add all the seeds of mangoes, add some water and let it boil. After the seeds are boiled remove all the mango pulp from the seeds.
- Meanwhile, once the mangoes are cooked in the pressure cooker, switch of the flame and let it cool.
- In a mixer grinder add sugar and grind it into fine powder. Transfer it in a bowl.
- Now in a big mixer jar, add cooked mango pulp and handful of pudina leaves. Cover the lid and grind it into a fine paste. Make sure there are no lumps. Transfer the paste into a separate bowl.
- Now, in another bowl, add 3 big teaspoons of the concentrated aam panna paste and add 3 tablespoons of powdered sugar, add black pepper powder, roasted cumin powder, mix all the ingredients at this point.
- Now dilute it with chilled water and mix continuously. Adjust the consistency as per your preference. Add rock salt as per taste and mix again.
- Serve chilled in glass and top it with mint leaves and ice cubes.

For Sweet Sattu:
- Chana Sattu – 2 tbsp
- Sugar – 1 tbsp
- Lemon – ½
- Water – 1 ¼ cup
- Ice cubes – a few
For Salted Sattu:
- Chana Sattu – 2 tbsp
- Sugar – 1 tbsp
- Salt – a pinch
- Rock salt – a pinch
- Pepper Powder – a pinch
- Cumin powder — a pinch
- Coriander Leaves – a handful
- Lemon – ½
- Ice cubes – a few
- Water – 1 ¼ cup
Recipe:
- For sweet sattu, add the sattu powder, some sugar, some lime juice (optional). Lastly add some chilled water and stir well.
- For savoury, add the sattu powder, a pinch of salt & rock salt and cumin powder. Add some chopped mint leaves and a bit of lime juice. Lastly add some chilled water and stir well.
3. Bel Sharbat: Bel Sharbat, made from the bel fruit – also known as wood apple and often referred to as the “king of fruits” for it’s powerful health benefits – is a well known and loved summer drink that helps the body stay cool and balanced during intense heat. Known for excellent cooling and digestive properties, it soothes the stomach, supports gut health, and helps prevent common summer issues like dehydration and heat discomfort. It’s naturally refreshing taste combined with the nourishing qualities makes it a far better choice than regular sugary drinks. Here is an easy recipe that you can try for yourself this summer
Ingredients:
For Fresh Wood Apple/ Bel Sharbat:
- Wood apple – 1
- Powdered sugar – 8 tbsp
- Roasted cumin powder – 2 tsp
- Black salt – 2 tsp
Bel Sharbat for long shelf life:
- Wood apple – 1
- Sugar – 2 cups or 450 gm
- Lemon – 4 no.
- Mint leaves – a few handful
- Black salt – 2 tsp
- Roasted cumin powder – 2 tsp
Recipe:
For Fresh Bel Sharbat:
- Crack open the bel or wood apple fruit, and using a spoon scoop out the entire pulp from the fruit in a bowl. Now add 2 glasses of water, and dip entire pulp in it. Mash the pulp with water using spoon or bare hands.
- Now using a strainer, strain the entire juice in a bowl. Remove the excess pulp remaining after straining the juice. Add some water and strain again the pulp to extract the juice completely.
- To the extracted juice or sharbat add powdered sugar at this stage or honey as an alternative to sugar. Add roasted cumin powder, black salt and stir well.
- Add some ice cubes and serve chilled.
For concentrated Bel Sharbat:
- Crack open the bel or wood apple fruit, and using a spoon scoop out the entire pulp from the fruit in a bowl.
- Now in a vessel transfer the wood apple/ bel fruit pulp and add 2 glasses of water. Turn on the flame and let it cook completely for 10-12 minutes. Mash it using a masher while it is still hot while cooking. Make sure there are no big chunks of the fruit. Turn off the flame.
- Strain the pulp by squeezing it nicely. Now transfer the strained pulp to the vessel again and add sugar approximately 2 cups to it and turn on the flame. Let it cook for 5-6 minutes until sugar dissolves. Turn off the flame and let it cool down.
- Now, after it is cooled completely, add lemon juice to enhance the taste and preserve it for longer duration. Mix well.
- To make sharbat from the concentrated mix, in a glass add some ice cubes, a pinch of black salt, cumin powder, mint leaves and add 2 tablespoons of the concentrated sharbat mix and add chilled water and serve.
4. Masala Chaas: Masala Chaas is one of the simplest yet most effective drinks to stay cool and refreshed during hot summer days. Ingredients:
- Curd/ yogurt – 250 gm or 1 cup
- Water (cold/chilled) – 2 glasses
- Green chilli – 1
- Black salt – 1 tsp
- Salt – 1 tsp or as per taste
- Mint leaves (chopped) – 1/3 cup
- Coriander leaves (chopped) – 1/3 cup
- Black Pepper (crushed or grounded) – ¼ tsp
- Roasted cumin powder – 1 tsp
Recipe:
- In a big mixing jar add coriander leaves, mint leaves and one green chilli. Add little water and close the lid of the jar and grind it for 6-8 seconds. Now to the grinding jar add curd or yogurt, little black salt, regular salt and roasted cumin power. Add half a glass of water and crushed black pepper. Close the jar and blend everything for 4-6 seconds.
- Pour the blended curd into a big pot or vessel. Now dilute it with 1 glass of water and stir it well. Adjust the consistency and add water if required. Add to it some regular salt as per taste and a pinch of black salt, roasted cumin powder.
- Use a wooden churner or hand blender to churn it for few seconds. You may add little water at this stage if required.
- Pour the chaach in glass, sprinkle crushed black pepper and roasted cumin powder. Garnish with mint leaves and coriander leaves. Serve chilled.
5. Watermelon Panna: Watermelon Panna is a refreshing twist on traditional summer coolers, combining the natural sweetness of watermelon with tangy, spiced flavours to create a perfectly balanced drink for hot days. With the high-water content, watermelon helps keep the body hydrated, while the added spices enhance flavour and aid digestion. Ingredients:
For Watermelon Panna Concentrate:
- Watermelon juice – 6 cups
- Sugar – ¾ cup
- Chilli powder – 1 tbsp
- Cumin -1 tbsp
- Peppercorn – 12-15 nos
- Mint leaves – handful
- Salt – to taste
- Black Salt – 1 tsp
- Lemon, small – 5-6 nos
- Ice cubes – handful
- Mint leaves – handful
- Lemon wedges – handful
- Water – as required
Recipe:
- Cut the watermelon in top to down motion and roughly cut the watermelon into pieces. Now in a mixer grinder add all the chopped watermelon pieces and grind it well. Using a strainer strain the entire juice.
- In a thick vessel, pour the juice and reduce it by 50%. While boiling, add sugar and red chilli powder to make it sweet and spicy.
- Keep scraping the sides and let it cook nicely.
- In another pan, dry roast cumin seeds and peppercorns. Once roasted, spread it on flat surface and crush it with a rolling pin. Keep it in a bowl.
- Once the watermelon juice is reduced to half, turn off the flame and add the mint leaves along with the stalk to get maximum flavour. At this point, add regular salt, black salt, roasted cumin and black pepper powder and give it all a good stir. Let it cool completely.
- Once cooled, remove the mint leaves from the juice. Now add lemon juice to it and mix well.
- Pour it all in a glass bottle to store the Watermelon Panna Concentrate. This can be stored in the refrigerator for 7-10 days.
- To instantly make the Watermelon Panna, in a jar add some ice cubes, mint leaves, lemon wedges and our Watermelon Panna Concentrate, dilute it with water as per requirement. Serve chilled.
